Walnut and Basil Pesto

Move over pine nuts there’s a new nutty flavour in town….

Instead of sticking with the original pine nut recipe I’ve decided to mix it up and try a new nutty experience. 

100g Walnuts
1-2 Garlic Cloves, peeled
100g Parmesan Cheese
50g Basil
150ml Olive Oil
Juice half a Lemon
Salt & Pepper to season
Makes approx 390g jar worth of pesto
Put the walnuts and garlic into a processor and blitz until finely chopped. Add the cheese and blitz again. Add the basil and blitz again whilst slowly pouring in the olive oil. Taste and season with the lemon juice, salt and pepper.

I think the walnuts add a deeper flavour to the pesto.

Pesto is a staple in my fridge. I tend to make up a batch and then keep it in an air tight jar. It will keep for at least a week or two.

Walnut and Basil Pesto is so versatile. It can be spread thick on bread for the tastiest sandwich explosion.

Here I have made a Chicken, Tomato, Mozzarella and Pesto Panini. Lightly toast the two halves and enjoy as an open panini.

Or squash the two halves together and put in a panini maker for a delicious lunch in minutes.

Pesto can make a fabulous dip.

Or use as a sauce for pasta or gnocchi for a glorious meal in no time at all.

Having a jar of homemade pesto to hand is perfect for those times when you want great tasting food FAST. Whilst packing in a few healthy nutrients from the walnuts and the basil as you go. 

All it needs now is to sit back, relax and enjoy with a big glass of red! Sounds perfect to me!

  • Yum! Homemade pesto is so easy and delicious although I don’t make it as often as I’d like. I can imagine the walnuts bring a really interesting taste to the pesto and I like your different suggestions for eating it 🙂

  • Just got back on the pasta machine, having great results. Some pesto could be an Idea. Still wild Garlic around, this is also a possibility, before the season ends. I tried a Watercress Pesto recipe once, it wasn’t a nice result.

    • I’ve always wanted to try a pasta machine after seeing one on James Martin Home Comforts! Makes it look so easy. Fresh homemade pasta with homemade pesto sounds delicious.

  • Great idea to use walnuts instead of pine nuts, it sounds delicious. I’m always on the look-out for alternative pestos because it’s such an easy meal option, but the traditional version does get a bit dull. Red pepper pesto is another favourite at ours!
