Move over pine nuts there’s a new nutty flavour in town….
I think the walnuts add a deeper flavour to the pesto.
Pesto is a staple in my fridge. I tend to make up a batch and then keep it in an air tight jar. It will keep for at least a week or two.
Walnut and Basil Pesto is so versatile. It can be spread thick on bread for the tastiest sandwich explosion.
Here I have made a Chicken, Tomato, Mozzarella and Pesto Panini. Lightly toast the two halves and enjoy as an open panini.
Or squash the two halves together and put in a panini maker for a delicious lunch in minutes.

Pesto can make a fabulous dip.
Or use as a sauce for pasta or gnocchi for a glorious meal in no time at all.
Having a jar of homemade pesto to hand is perfect for those times when you want great tasting food FAST. Whilst packing in a few healthy nutrients from the walnuts and the basil as you go.
All it needs now is to sit back, relax and enjoy with a big glass of red! Sounds perfect to me!
