This is homemade tomato soup in a flash!
In the past I’ve gravitated away from making tomato soup as the idea of spending time roasting and then peeling the tomato skins bores me slightly!
I like the idea of soup being quick to prepare whilst keeping the fresh taste.
Since figuring out this simple recipe, there’s no excuses!
This is the quickest soup I know!
Chop 1 red onion.
Gently fry it in a little oil for a few minutes.
Add 2 tins of chopped tomatoes & a handful of fresh basil.
Let it bubble for 2-3 minutes.
Blitz with a handheld blender.
And you’re done!
This soup is almost as quick to make as opening a can of soup and heating on the hob. But it tastes so much better.
It creates such a light and refreshing meal.
Serve with fresh bread and possibly grated cheese.
Or simply serve it as it is.
