Today I’ve taken a culinary journey to France, Nice to be precise.
For their specialty Salade Nicoise.
I am imagining a warm summers evening in France, sat out on a balcony overlooking spectacular scenery with a tall glass of wine and an authentic Salad Nicoise.
In reality I am sat curled up on the sofa watching the rain through the window in Nottingham. At least I have my bowl full of delicious ingredients that come together as (what I think) a darn good attempt at a salad Nicoise.
For the dressing….
2 tbsp Extra Virgin Olive Oil
1 tbsp Red Wine Vinegar
2 tsp Parsley, chopped
2 tsp Chives, snipped
1 Garlic Clove, chopped
Salt and pepper to season.
Put the above ingredients in a small bowl and whisk together.
For the Salad
1 tin of Tuna, drained
3-4 New Potatoes, cooked and halved
3-4 Tomatoes, sliced
1 Egg, hard boiled
Handful of Green Beans, cooked and drained
As many green leaves and black olives as you desire.
Toss all the ingredients into a bowl and drizzle over the dressing.

I am a big fan of olives, so I had to go back for more half way through. These are black olives with no artificial colour (hence why they do not look black) Confused yet?!
Finished! I had to practically stop myself from licking the plate clean.
Maybe next year I can make my daydream a reality and journey to Nice to live the real Nicoise experience. I may have to brush up on my French beforehand as you can see from my poor attempts at French throughout this post. Feel free to teach me some phrases….
