Mexican Veggie Burgers
Watch out, this is a feisty beast with no meat in sight.
Who says you need meat to pack a punch in the burger world?
This mean, Mexican spiced, Veggie Burger will give the regular old burger a good grilling!
With it’s mean kick of fajita seasoning & Mexican accompaniments it will leave you slightly loco!
What You Need:
200g frozen spinach
200g chick peas, canned, drained
200g kidney beans, canned, drained
Large handful of coriander
1.5-2 tablespoons homemade fajita seasoning
75g plain flour + extra for coating
Any accompaniments you desire:
What To Do:
Preheat your oven to 180C.
Put the spinach, chick peas, kidney beans, coriander, fajita seasoning & flour into a food processor…..
Blitz up for a few minutes to form a paste. You may need to jiggle the food processor to get the beans etc moving initially.
Divide the mixture into 4 equal sized burger patties, then place on a floured plate and coat with a layer of flour. Return to the freezer for a few minutes to firm up again. Once ready, heat up some oil in a frying pan and fry the patties for 2-3 minutes on each side until golden brown.Then place the burgers onto a baking tray and pop into the oven for 9-10 minutes.
This leaves plenty of time to prepare the extras and plate up!
I’ve gone for lettuce, homemade salsa, avocado slices, gerkins, onion rings and ketchup all squidged into a brioche bun.
Now excuse me but hands off, this is Nacho burger it’s MINE!
UPDATE If you want even more spice just add more of the fajita seasoning to the paste mix!
