Ok so after my severe gluttonous ways over Easter I’m in serious need of some healthy greens! So here’s my offering to myself!
With lots of flavoursome herbs and a zesty lemon dressing this salad tastes so fresh and scrumptious and leaves your lips tingling!
For the dressing:
Mix the juice of half a lemon with
2 tbsp of olive oil and
1 tsp of sugar.
Leave to one side.
For the salad:
100g Frozen Peas
150g Frozen Broad Beans
Half a Cucumber, sliced
10g bunch flat leaf Parsley, chopped
10g bunch Mint, chopped
small handful Chives, chopped
100g Feta Cheese, cubed
Boil a pan of water. Boil the peas and broad bean for 2-3 minutes until cooked. Drain. Rinse them in cold water to cool them down. Leave to drain again.
Put the green ingredients into bowl and toss together.
Throw on the feta.
Drizzle over the lemony dressing.
Serve with a handful of croutons for added crunch.
Serves 2-3 people
Dig in and feel very smug about your healthy dinner!
