Chocolate Piñata Muffins

I’m celebrating in style today with my Piñata Muffins!

What better way to celebrate than with a Piñata Muffin! And a glass of wine of course.

I’ve seen and heard of Piñata cakes over the last few months so I wanted to make them myself.
My first thought turned to M&M’s, lots of M&M’s all cascading out of a moist chocolaty muffin. Before I knew it I was then poised and ready to bake.
Quick as a flash my Chocolate Piñata Muffins were born!
Stuffed full of different treats (why stop at M&M’s!) and topped with a chocolate butter icing.
These are the cakes of my childhood dreams!

3oz self raising flour
1oz cocoa powder
4oz baking spread
4oz caster sugar
2 eggs, lightly beaten
1-2 tbsp milk
A variety of sweets to fill the muffins

6oz icing sugar
2oz cocoa powder
1-2tbsp milk
1. Preheat the oven to 200C/180C fan/Gas 6
2. Line a 6 holed muffin tin with cases.
3. Cream the sugar and baking spread together until pale and fluffy.
4. Add the eggs, flour and cocoa powder and fold gently until combined.
5. Add the milk until the mixture is of dropping consistency.
6. Divide the mixture between 6 muffin cases & pop into the preheated oven for 20-25 minutes.
7. Once baked take out of the oven and cool on a cooling rack.
8. Meanwhile prepare the chocolate icing by creaming the baking spread with the icing sugar and cocoa powder.
9. Add the milk if the icing is too stiff.
10. Once the chocolate muffins are cooled cut a hole in the top of each muffin, going down as far as you dare! The bigger the hole the more sweets can fit in, but the more unstable the cake becomes.
11. Fill the hole with as many sweets as you can fit in!

12. Using a piping bag, pipe the chocolate icing on top of the sweets and continue to form a swirl.
17. Finally top with a sweet so you know what is inside the Piñata Muffins. Or foil your guests by putting a random sweet on top!
It’s then time to let the good times flow!

No party is complete without a party popper or two!
