So this is my go to meal when I’m home from work and I want something quick and flavoursome.
I tend to load up on the salsa and it keeps the wrap fresh and light.
So lets start with the salsa…..
Finely chop 2 large tomatoes, 1 small red onion, 1 green chilli and a handful of coriander and throw in a bowl. Mix in the juice of half a lime.
So next step, chicken fajitas…..
Chop 500-600g chicken and place in a bowl with 1 tbsp of oil and one serving of Fajitas Seasoning Mix so the chicken is thoroughly coated. Leave to one side.
Chop an onion and a pepper.
Fry the onion in a frying pan and let it sweat a little.
Add the coated chicken and let it brown.
Finally add the pepper.
Fry until the chicken and pepper are cooked.
Load up the wraps with the salsa, chicken fajitas, grated cheese and I like to add slices of avocado that stay soft and cooling amongst the heat of the fajita and salsa medley!
Wrap it all up and stab with a cocktail stick if it has been overfilled! Just so it stays looking neat at least until it reaches the table!
BEWARE this is not a meal to eat on a first date or in posh company! If it is packed full to the brim it tends to erupt at the edges. If I were trying to be more civilized I would consider serving on a plate with rice, piling all the extras high and eating with a knife and fork!
