My Apricot Oat Biscuits are on the healthier side but still delicious!

Apricot Oat Biscuits

Made with minimal sugar this recipe goes someway towards being healthy. The recipe also uses brown sugar which is less refined as white sugar.

The apricots themselves then add extra sweetness and texture.

 

 

Apricot Oat Biscuits

Ingredients

100g butter, unsalted

80g soft brown sugar

1 large egg

Zest of one large orange

170g plain flour

80g dried apricots, chopped

50g oats

Method

Preheat the oven to 210C/190C Fan. Line a baking tray with baking parchment.

Cream the butter and sugar together until pale and fluffy.

Add the egg and the orange zest and beat until combined.

Tip in the apricots and stir, then mix in the flour to form a dough that is not too sticky.

Roll up into 10-12 balls then roll in the oats.

Put each ball on the baking tray then using a fork push each ball gently down in the middle.

Pop into the preheated oven for 10-15 minutes until golden brown.
