Pancake day is fast approaching!
A date firmly in my diary this year is Pancake day. It’s on the 28th of February.
Starting the celebrations early I thought I’d share the best pancake recipe and my two favourite toppings.
Start with a simple American Pancakes recipe:
200g self raising flour
1 tsp baking powder
knob butter, melted
butter for frying
1. Mix the flour and baking powder in a bowl. Create a well in the middle and tip in the milk and egg. Whisk the ingredients together to form a batter. Whisk in the butter. Leave the batter to rest for 15 minutes.
2. Put a knob of butter in a pan and heat. Plop 3-4 tbsp of the batter into the pan for each pancake. Do 2-3 pancakes at a time. Cook for a few minutes on each side. Keep them warm on a plate resting over a pan of simmering water whilst you do the next batch.
My Two Favourite Toppings:
1. Mixed Berries & Yoghurt
I defrost a handful of frozen berries. Then dollop a large spoonful of natural yoghurt (I use skyr) on top of a stack of American Pancakes and tip over the berries.
2. Maple Syrup & Bacon with blueberries
Self explanatory! Grill a couple of rashers of bacon then plonk the bacon and blueberries on top of a stack of American Pancakes and drizzle over maple syrup.
